Ingredients

  • 500g chicken (cut into pieces)

  • 1 packet Aachi Chettinad Chicken Biryani Masala

  • 2 cups basmati rice

  • 2 onions, sliced

  • 1 tomato, chopped

  • 1 tablespoon ginger-garlic paste

  • 2 tablespoons oil or ghee

  • 1/2 cup yogurt

  • Fresh coriander and mint leaves (for garnish)

  • Salt to taste

  • Water (as required)

Spice Blend Contains
Coriander, Chilli, Fennel, Cumin, Garlic, Cinnamon, Clove, Bay Leaf, Star Anise, Cardamom, Nutmeg, Mace, Salt.

Instructions

Prepare the Rice

Wash and soak the basmati rice for 20 minutes. Drain and cook the rice until it’s 70% done. Set aside.

Sauté the Onions

Heat oil or ghee in a large pot. Add sliced onions and fry until golden brown.

Cook the Chicken

Add ginger garlic paste and sauté until the raw smell disappears. Add chicken pieces and cook until lightly browned.

Add Masala

Mix in chopped tomatoes, yogurt, and Aachi Chettinad Chicken Biryani Masala. Cook until chicken is well-coated and the spices are aromatic.

Layer the Biryani

In the same pot, layer the chicken with the partially cooked rice. Garnish with coriander and mint leaves.

Simmer

Cover and cook on low heat for 10-15 minutes until the rice is fully cooked and the flavors meld together.

Serve Hot

Garnish with extra coriander and mint leaves, and serve with raita or a boiled egg.
